Abstract

Coffee fruit skin is a waste from coffee bean processing. Coffee (Coffea Arabica L.) pulp extract contains anthocyanin compounds, polyphenols, beta-carotene, and vitamin C that have antimicrobial activity. The purpose of this study was to identify the optimal concentration of Arabica coffee fruit skin extract, which has antibacterial activity against Staphylococcus aureus and Escherichia colibacteria. This research was a type of experimental study. The variation concentration of the solution was 25%, 50%, and 75%. The diameter of the inhibition zone (mm) on the Mannitol Salt Agar (MSA) and Mac Conkey media was measured and analyzed. The 25% concentration of the extracts tested in both showed results of inhibition. The results showed that the optimum concentration of the extract against Staphylococcus aureus was 50% (11,44 mm)(P<0.05), while the optimum concentration of Escherichia coli was 25% (11,66 mm)(P<0.05).Moreover, Coffee (Coffea Arabica L.) pulp extract demonstrated antibacterial activity against both Staphylococcus aureus and Escherichia coli.
